Alevante, located in the Sancti Petri Palace hotel in Chiclana de la Frontera (Cádiz), is a restaurant led by renowned Spanish chef Ángel León, also known as the “Chef of the Sea.” It focuses on inventive coastal cuisine, using fresh, local ingredients and marine products with a strong emphasis on sustainability. Alevante originally recreated iconic dishes from Ángel León’s flagship restaurant, Aponiente, but has grown to develop its own bold identity under the guidance of head chefs Cristian Rodríguez. The restaurant is also recognized for commitment to the ocean, sustainable fishing, and innovation—he even experiments with seaweed, plankton, and other marine flora as ingredients.
